What’s in our buttercream frosting?

Our buttercream cakes are layered with our top quality Italian meringue buttercream, made in-house. This frosting is silky-smooth and pairs wonderfully with our cakes.

The process to make Italian meringue buttercream is meticulous and precise, and requires very accurate temperatures to achieve the best result. We love the taste and texture of Italian meringue buttercream and we love being able to incorporate it into our cakes. People love this frosting because it is the most stable of all types of buttercream and is the least sweet.


We begin by whipping fresh egg whites until soft peaks are formed, then we boil sugar to 240F until it becomes a syrup. In this stage, the temperature is incredibly important as it can determine whether the sugar will be stable enough or not.

Then, the hot sugar syrup is slowly poured into the egg whites while it is continuing to whip. Softened butter is then incorporated into the mixture. This step requires patience, the ingredients may take a while to thoroughly combine and create the right texture. Our specialised recipe allows us to create smooth, crisp edges on our cakes unlike others you may have seen.
